Fried rice


This meal is both versatile and nutritious. I try to plan ahead and pulse a head of cauliflower into rice size (usually 15-20 pulses) on Sunday so it is ready to go when I need it.  If you don't have a food processor, you might just spend a little more time chopping the cauliflower to the right size.


Paleo fried rice
Prep: 5-10 min
Cook: 10-12 min
Serves: 1-2

What you need:
1 T coconut or olive oil
1/2 head cauliflower, chopped down to rice size
Veggies of choice. Options include: snap peas, steamed cabbage, onion, red bell pepper, steamed broccoli. I know I am missing some...
Protein of choice. Options include: chicken, steak, shrimp, pork. Need 1-2 cups.
1/2 tsp garlic powder or 1 clove minced garlic
Coconut aminos or wheat-free soy sauce (Tamari) to taste. Probably around 2 T.
Optional: chives, toasted or raw nuts such as cashews or sliced almonds

In the photo, I used onion, red bell pepper, chicken, and added chives and almonds at the end.

What to do:
Heat large skillet on medium-high to melt 1 T coconut oil (or olive oil)
If using onion, add this to the pan and cook until nearly translucent.
Add garlic powder or minced garlic.
Add cauliflower and any other raw vegetables you may be using. Stir fry for about 5-7 minutes.
Add any steamed veggies and protein. Stir fry until warmed through.
Add soy sauce alternative and mix well.
Top with chives and nuts, if needed.
Serve and enjoy!

  1. This is brilliant! I had never thought of cauliflower as a base for stir fry! Btw, the video on the toxicity of sugar was jaw dropping. I had my husband watch it. We are both committing to lowering our sugar intake drastically. I've heard sugar is bad for yor skin, too. Something about it's effects on collagen or something?
