The Week Ahead

Hope everyone is having a great and joyful Easter!  Here is our meal plan for the week:
 
Breakfasts:  
Sweet potato, sausage, and (hidden) spinach hash...recipe to follow this week

Lunches: 
Pear, walnut, and chicken salad
Greek salad  made with tuna

Dinners:
Monday:  Grilled chicken and roasted broccoli.  When I oven-roast broccoli, I toss thoroughly with around 1 tbsp melted coconut oil then sprinkle with garlic powder and sea salt.  I roast at 400 deg until brown crunchies form (about 18 min).
Tuesday:  Shrimp and coconut green beans (from Well Fed)
Wednesday:  Cuban pork lettuce wraps
Thursday: Tomato cream chicken sausage "pasta" bake
Friday:  Birthday Dinner!!  ZaZa in Little Rock.  I'm fully intending to get pizza.
Saturday:  Italian antipasto salad (from my pinterest board)
Sunday: Paleo cabbage rolls made in slow-cooker
